Banana Oatmeal Muffins You Can Count On

Ali is sharing this recipe from one of her good friends who dropped off a double batch just days after having her son (AREN’T THOSE the best friends! food is life!). “I swear these muffins kept me going those first few weeks when you don’t even know what time of day it is.”
Lets get down to business.
Classic Oatmeal Banana Muffin
Prep time: 10 minutes
Cook time: 20-25 minutes
Yield: 12 muffins
Ingredients:
3 large bananas
½ cup of white sugar or coconut sugar
1 egg (beaten)
1/3 cup of unsweetened apple sauce
1 tsp baking soda
1.5 tsp baking powder
½ cup all-purpose flour
½ cup of whole wheat flour
½ cup oats
½ tsp salt
¾ cup of chocolate chips
Directions:
Preheat oven to 350 F and grease muffin tin
Mash bananas, add to bowl and mix in sugar, beaten egg, apple sauce and mix together.
Add the remaining ingredients to the same bowl and mix once all ingredients have been added.
Spoon batter into muffin tin and bake for 20-25 minutes or until golden brown
